What do we do?~

Highland Game is a primary and secondary processor of wild and farmed venison. Our wild Venison is collected from specially selected deer larders throughout the Highlands and is then processed at our superior processing plant in Dundee. Our current business is made up of supplying Venison and Game to Wholesalers, Caterers, Multiple Retailers and Direct On-Line Sales throughout the UK. Highland Game is also currently exporting across Continental Europe.

Highland Game Ltd is committed to supplying a range of high quality products. The aim of Highland Game is to promote "Natures Own Produce" and excellent butchery skills. Our venison is renowned for its sheer quality and Highland Game is proud to make easy to cook and delicious venison available to the customer.

Where are we?~

Highland Game is based in Dundee, which is an ideal location with good transport links to both the north and south of the country. We operate daily collections from deer larders throughout the Highlands of Scotland using refrigerated hanging vehicles. All despatched goods are carried out by Third Party carriers.

Quality Assurance~

Highland Game prides itself on being the only Scottish Venison producer to offer 100% veterinary inspection; this gives the customer a level of confidence never offered before in this market. Highland Game operates under a HACCP system, identifying hazards and putting in place preventative measures. This allows us to avoid any food safety hazards throughout the production process. Highland Game is EEC approved and trades under EEC export approval number UK 1178 EEC. Highland Game is also a member of the SQWV (Scottish Quality Wild Venison Accreditation Scheme).

The purpose of this Accreditation Scheme is to give Scottish Wild Venison a level of Quality Assurance and Traceability that has never been done before. In turn this allows us to pass the extra peace of mind to the customer. SQWV accreditation means that venison processed under the SQWV title can only come from SQWV approved larders and be processed at SQWV approved premises.

The Plant~

Highland Game is totally committed to quality from the moment the carcass is collected. Collection is carried out by our experienced staff in our 7.5 T refrigerated hanging vehicles. The carcasses are transported in our Temperature Controlled vehicles to Highland Game, Processing plant in Dundee, where each carcass is inspected, graded and weighed.

The carcass is then skinned by our experienced staff and further inspected by an OVS and either passed or rejected. The carcasses are then taken in to our processing room and cut to customer specifications and requirements. Produce is either sold as fresh or blast frozen and stored in our holding freezer ready for despatch. All Highland Game produce is Vacuum Packed to maintain freshness and boxed on site.
