Partridge breasts with orange, honey and sesame seeds
A very quick starter and a star dish. It can be rustled up in moments and is very impressive. The longer you marinate them the better, they will taste fine with only 10 minutes in the marinade. Serve on a bed of pretty salad leaves.
Ingredients

12 prepared skinless partridge breasts
Finely grated zest and juice of 1 orange
2 tbsp. runny honey
4 tbsp. olive oil
2 tsp. Balsamic vinegar
2 tsp. sesame seeds
young salad leaves, to serve
salt & freshly ground black pepper
First prepare the marinade. Mix the orange zest with the honey, olive oil and vinegar. Add the partridge breasts, mix well, cover and leave to marinate in the fridge for up to 2 hours.
Remove the breast from the marinade and heat a frying pan until quite hot. Add the breasts and brown quickly for 1 minute on each side. Add the marinade, seasoning and the sesame seeds and bring to the boil. Simmer until the sauce is syrupy and begins to caramelise slightly.
Remove from the heat and pile 3 breasts onto each of four plates lined with salad leaves. Drizzle with the sauce and serve immediately.
